Capture the warm taste of summer with this strawberry infused Aperol cocktail. A slow infusion of ripe strawberries tempers the bitterness of the Aperol and gives a subtle berry flavour and a gorgeous ruby blush colour. Elderflower liqueur compliments the slight bitterness of the Aperol and adds a floral note to this bright and fresh tasting tipple. The delicate balance of sweet and bitter flavours come together in this delightful summer cocktail that’s perfect for sipping on a warm summer afternoon.

Ingredients

Aperol: With flavours of orange, gentian, rhubarb and cinchona, Aperol is a bright orange bitter Italian aperitif that is most often featured in the popular Aperol spritz. The slight bitter notes balance the sweetness of the strawberries and elderflower liqueur.

Strawberries: Use fresh sliced strawberries to infuse the Aperol.

Elderflower liqueur: My favourite brand of elderflower liqueur is St Germaine which is widely available in liqueur stores. Each bottle is produced in France and infused with the essence of 1000 elderflower blossoms.

Lemon juice: A splash of lemon juice adds a balancing acidity.

How to Make Strawberry Aperol Cocktail

Infuse the Aperol

Wash and slice the strawberries. Add the berries to a quart jar. Top with the Aperol. Seal the jar and refrigerate for at least 24 hours. Strain before using. The longer the Aperol infuses, the stronger the strawberry flavour. The Aperol with strawberries will keep for up to 3 to 4 days in the fridge or for longer after straining.

Make the simple syrup

Make a simple syrup by combining the sugar and water in a small saucepan. Place over high heat and bring to a simmer. Stir occasionally until the sugar is completely dissolved. Let cool completely before using. The simple syrup will keep for 2 to 3 weeks in the fridge.

Make the Strawberry Aperol Cocktail

In a cocktail shaker add the strawberry infused Aperol, gin, elderflower liqueur, simple syrup, and lemon juice. Add ice, then cover and shake for 10 to 15 seconds. Strain into a coupe glass. Garnish with fresh strawberries if desired and serve!

  • 1 ½ cups sliced strawberries
  • 750 ml Aperol

Simple Syrup

  • ½ cup sugar

  • ½ oz elderflower liqueur
  • ½ oz simple syrup
  • ½ oz lemon juice
  • fresh strawberries, for garnish
