Strawberry Aperol Cocktail

Servings 1 cocktail

Ingredients 

Strawberry Infused Aperol

  • 1 ½ cups sliced strawberries
  • 750 ml Aperol

Simple Syrup

  • ½ cup sugar
  • ½ cup water

Strawberry Aperol Cocktail

  • 1 oz Strawberry Infused Aperol
  • 1 oz gin
  • ½ oz elderflower liqueur
  • ½ oz simple syrup
  • ½ oz lemon juice
  • fresh strawberries, for garnish

Instructions 

Strawberry Infused Aperol

  • Wash and slice the strawberries. Add the berries to a quart jar. Top with the Aperol. Seal the jar and refrigerate for at least 24 hours. Strain before using. The longer the Aperol infuses, the stronger the strawberry flavour. The Aperol with strawberries will keep for up to 3 to 4 days in the fridge or for longer after straining.

Simple Syrup

  • Make a simple syrup by combining the sugar and water in a small saucepan. Place over high heat and bring to a simmer. Stir occasionally until the sugar is completely dissolved. Let cool completely before using. The simple syrup will keep for 2 to 3 weeks in the fridge.

Strawberry Aperol Cocktail

  • In a cocktail shaker add the strawberry infused Aperol, gin, elderflower liqueur, simple syrup, and lemon juice. Add ice, then cover and shake for 10 to 15 seconds. Strain into a coupe glass. Garnish with fresh strawberries if desired and serve!
