Mulled Spiced White Wine

Servings 4 servings

Ingredients 

  • 1 bottle (750 ml) white wine
  • ½ cup (125 ml) white port
  • 2 slices orange
  • 2 sprigs fresh rosemary, plus extra for garnish
  • 3 fresh bay leaves
  • 3 whole star anise
  • 6-8 allspice berries
  • 6-8 whole cloves
  • 6-8 cardamom pods
  • 1 tsp (5 ml) pink peppercorns
  • ¼ cup (60 ml) honey, or more as needed
  • extra whole spices, for garnish

Instructions 

  • In a saucepan, combine the white wine, white port, orange slices, fresh rosemary sprigs, bay leaves, star anise, allspice berries, cloves, cardamom pods and pink peppercorns,. Place over medium heat and allow the wine to warm up. Turn the heat down to low as it begins to simmer. Cover and allow to steep on low for 20 to 30 minutes. Do not allow the wine to boil which would evaporate the alcohol.
  • After steeping, add the honey and stir to dissolve. Remove the orange slices and herbs from the mulled wine. Carefully strain the warm wine into a pitcher or teapot to serve. Garnish each glass with a sprig of rosemary and a few whole spices. Enjoy!
