Ingredients

Lemon Balm Syrup

  • 1 cup water
  • 1 cup sugar
  • 1 cup loosely packed fresh lemon balm leaves

A Midsummer Cocktail

  • 1 ½ oz gin
  • ½ oz B&B liqueur
  • 1 oz Lemon Balm Syrup
  • ½ oz fresh lemon juice
  • 4 dashes rhubarb bitters

Instructions

Lemon Balm Syrup

  • In a saucepan combine the water and sugar. Bring to a simmer over medium heat. Stir and let simmer until the sugar has dissolved. Add the fresh lemon balm leaves and continue to simmer for another minute. Remove from the heat, cover, and let steep for 20 to 30 minutes.
  • After the lemon balm has steeped, strain the syrup through a fine mesh strainer. Let the syrup cool completely before using. Can be stored in the fridge for several weeks.

A Midsummer Cocktail

  • In a cocktail shaker, combine the gin, B&B liqueur, Lemon Balm Syrup, fresh lemon juice, and the rhubarb bitters. Add ice, then cover and shake well for 10 to 15 seconds.
  • Strain into a coupe glass and enjoy!
